Lobster Tail, sous-vide with a citrus sabayon
Avocado Caprese, tomato, mozzarella, basil, red onion, balsamic reduction
Duck Spring Roll, duck confit, scallions, ginger, sweet chili sauce

Pan-Seared Scallops, truffle oil and popcorn crust, sweet potato peanut puree, lemon beurre blanc, tobacco shallots, asparagus
Halibut, spinach mashed potatoes, mango relish, fennel cream sauce
